Gluten Free Soy Free Dairy Free Chicken & Black Beans over Rice or Quinoa
This is a recipe that I modified to meet our strict diet requirements of gluten free, dairy
free, soy free, and tomato free. It has a sort of Jamaican flare!
If you have pre-cooked chicken this dish is pretty fast.
- Onions (scallions if you have them)
- Bell Peppers
When the chicken is cooked add:
- 1 cup broth (I use Trader Joes organic chicken broth)
- 1.2 t chopped hot peppers
- 1 t curry
- 1/2 t chili powder
- 1/2t thyme
- 1/2 t oregano
- 1 t allspice
- 1/2t ground cloves
- 1 can black beans
I let this simmer 5-15 minutes. (If you aren’t allergic to tomatoes, add a can of tomatoes.)
Typically I will serve this over brown rice or quinoa.
Change to quantities to match the tastes of your family.
