Death by Chocolate – Days Gone By

Death by Chocolate – NOT

According to wikipedia, the term ‘death by chocolate‘  is a marketing term for various desserts that feature chocolate (especially dark chocolate or cocoa) as the primary ingredient.

My daughter LOVES chocolate!  Her three favorite foods are: Chocolate, Coffee and Pizza!
Based on the last testing, she isn’t allowed to eat any of those three and she is dying.

Now we are on a quest to find some acceptable substitutes. A friend recommend using carob chips and so I made a trek to the local health food store.  Low and behold, they had unsweetened carob chips.

BUT, when I looked at the ingredients, they also had milk, whey and soy lecithin.  :o(

I did notice that they had carob powder and decided to see if I could find a suitable recipe

Here is one I found which had to be modified for our healthy diet plan:

3/4 cup carob powder
1/4 cup of xylitol
1 cup coconut oil
1 tablespoon vanilla extract

Add all the ingredients to a glass bowl or jar.  You do not want to heat on the stove directly so place in a pan of simmering water.  (An inch or two of water works fine.)

Place wax paper or parchment paper on cookie sheets. Pour the melted carob mix onto the wax paper and spread around.   (The thinner the mixture, the quicker it will harden.)

Place the cookie sheets in the refrigerator or the freezer until hardened.

Then break up carob mix into “chip” size and place in a plastic container.  Keep refrigerated or frozen until needed.

These chips will easily melt in your hands!!

NOTE: You may want to ‘butter’ the wax/parchment paper before pouring the melted carob mixture.  The butter will make it easier to remove the hardened mix.

It is not the same as “chocolate” chips but will have to do for now!

    I was actually going to post an article today with a VERY similar recipe! What we like to do is coat SOAKED almonds (maybe more on that later) in the liquid “chocolate” (though in our house we do use unsweetened cocoa powder) and then freeze them. They make a crunchy, rich, sugar-free treat! We use only stevia for sweetener.
