Recipes: Gluten Free/Dairy Free/Soy Free Meatballs
It is relatively easy to go online to find gluten free recipes. Similarly you can also find dairy free recipes or soy free dinner ideas. But try to find healthy recipes that are free of all three foods and there are very few that meet the requirement.
Fortunately, we do not have to be egg free. If you can’t have eggs, then I’m sorry.
We haven’t started using trying any gluten free breads since we are in the early stages of trying to calm down the immune system. So I didn’t even want to use bread crumbs made from gluten free bread. We decided to use just plain white rice flour to thicken the mixture.
Here is what we used:
- 1 package lean ground turkey
- 1 egg
- Dried basil
- Dried oregano
- [no pepper – dear daughter has an allergy]
- Garlic powder
- Minced garlic (fresh)
- Fresh basil leaves
- Onion diced
We just mixed everything together and then rolled them into balls and cooked in a skillet.
Here is how we made this fun. My son likes to “wing it” in the kitchen and I like to use a recipe as a foundation and then modify as I go along. So we had a “meatball contest.”
We each took a package of ground turkey and mixed our own ingredients. He added paprika and cayenne pepper. Needless to say, they were pretty strong!
I went a more moderate route and mine didn’t have enough zest. In the end, we decided a blend of the two recipes would be best but since we didn’t really pay attention to measurements, we will have to ‘wing it’ again!
